Sante Fe Salad from the Best of Bridge cookbook The Best of the Best
I must tell you first, that I do not like bean salads. I know they are healthy for me, and I want to like them, so I will try them, but usually they are too beany. However, this recipe works for me. It has the heading that I have written into my book - Good, for a bean salad. I was at a party last week were someone brought this salad, and I heard two different people state that they don't like bean salads, but this one was good. That's what reminded me of this recipe, and I have made a batch to take to my Canada Day potluck party. Happy Canada Day!
Cilantro Lime Dressing
1/4 C olive oil
juice of 2 limes
1/4 C chopped cilantro
1 tsp cumin
S &P to taste
Salad
19 oz can black beans (turtle beans), rinsed and drained
1 red bell pepper, diced
12 oz can kernel corn, drained
1/3 C red onion, chopped
1 jalapeno pepper, seeded & minced (I omitted this)
In a medium bowl, whisk together oil and lime juice. Add cilantro, cumin, salt and pepper and mix well. Stir in salad ingredients and correct seasoning. Serve at room temperature. Serves 6.

ReplyDeleteI know we covered this point last week at my blog, but I feel the need to restate that the Best of Bridge books really are the greatest cookbooks EVER. ;)
That does sound good. I'll bet it would be even better with a little avocado tossed into the mix.

ReplyDeleteI make a very similar salad, only I add a can of blackeyed peas. If you want to make it even easier, don't make the dressing and just pour your favorite bottled oil based salad dressing over it- I like Kraft Zesty Italian, but have used a lot of different italian/ vinagarettes.

lisa - simple is great! I have cilantro growing in my garden, so it was pretty easy anyway, but Kraft always helps. I like Italian dressing on cut up chunks of carrots, peppers, celery, and cherry tomatoes and then let it marinate.
I adore bean salads, and this one sounds wonderful!!!!
